Skill in roasting coffee is critical, it is a process controlled by scientific laws, but the outcome is strictly in the hands of man.
Unroasted coffee beans have no clue as to what they might become. The green beans do not have the characteristic look, smell, or taste of coffee beans that have been roasted. It is during the roasting process that the sugars and other carbohydrates become caramelized, creating a substance known as the coffee oil which gives the coffee its flavor and aroma.
At Country Grounds most green coffee is roasted at 400 to 450 degrees, internal bean temperature. During roasting, coffee beans shrink in weight due to the loss of moisture and double in size because of the beans' popping and expanding in response to the loss of moisture and carbon dioxide from the extreme heat being applied. The color change is due to the caramelization of the sugars present in the green beans.
Country Grounds Coffeehouse Roasts and Flavor Characteristics:
- Cinnamon - 380 degrees, at first crack when water (steam) is escaping. A medium milk chocolate color light brown with a sharper, more acidic, rich and rounded taste.
- City - 400 to 415 degrees, the first crack is completed and the coffee bean is browner and is crazed with darker lines. It has a slight bittersweet tang; less acidic and more rounded flavor.
- Light Full City - 415 to 425 degrees, a sign of 2nd crack (carbon dioxide escaping).
- Dark Full City - 425 to 435 degrees, entered 2nd crack, 10 seconds of snaps are heard and the roast is stopped. The bean is darker brown with a more bittersweet, less acidic, and more rounded flavor.
- Vienna - 440 to 450 degrees, the beans are showing signs of an oily surface, coffee oils coming to the surface and the color is a uniform dark, milk chocolate brown. The coffee will start to have a char taste and low acidity.
- French - 455 to 460 degrees, a dark brown to black surface with an oily appearance. No acid overtones and a char bittersweet tang flavor.
